Is March 26th each Year…Who Knew This?
Not sure if this is on your calendar, but March 26th has been designated “Spinach Day“. Of course everyone my age relates spinach as Popeye’s favorite power food to defend Olive Oyl. In fact, spinach is a top player in my daily nutrition mix, inspire of my mom’s effort to make my hate my spinach as a child. Given this high honor appeared to me to be natural to highlight this powerful veggie each March. Personally, we have been growing spinach in both our inside aeroponic garden tower and our raised beds all winter.
Spinach has a lots of Vitamins, like Vitamin A and K, plus Folate, Vitamin C, Manganese, and oh yes critically important dietary fiber. Check out my our quick overview about how each of these nutrients benefits the body. PLUS…

It has so many good uses in smoothies, sautés, soups, and salads. Here just a few I found with a quick search.
Or try my favorite recipe to add spinach to my regular diet.
- 1 box (10 oz.) chopped spinach, cooked, cooled and squeezed dry
- 1 container (16 oz.) organic sour cream *
- 1 cup “Real” Mayonnaise
- 1 package Knorr® Vegetable recipe mix (unless you have a better idea)
- 1 can (8 oz.) water chestnuts, drained and chopped (optional)
- 3 green onions, chopped (optional)
Mix, keep chilled until the party starts. Enjoy!
